Abstract

Background : Broiler chickens are characterized by fast growth as meat producers, ready to slaughter at a relatively young age and produce soft fibrous meat quality. The use of hazardous chemicals is in food products for public consumption. An example of an incident that often arises in the community is the use of formalin chemicals in slaughtered chicken. Objective : This study aims to determine the physical indicators of the presence of formalin and to determine how many samples contain formalin in broiler chickens sold in Godean Market, Sleman, Yogyakarta. Methods : This study used survey method. The object of this study was broiler chicken in Godean Market with 15 broiler chicken samples. This study was conducted in December 2023-January 2024. Samples were examined at the Chemistry Laboratory of the Environmental Health Department. Results : Out of 15 broiler samples, 12 broiler samples were found to contain formaldehyde and 3 broiler samples did not contain formaldehyde. Conclusion : Based on the research that has been done, it is known that 100% of broiler chicken samples are positive for formalin. Keywords : Broiler Chicken, Formalin Latar Belakang : Ayam broiler merupakan ayam yang memiliki ciri khas pertumbuhan cepat sebagai penghasil daging, siap dipotong pada usia relatif muda dan menghasilkan kualitas daging berserat lunak. Penggunaan bahan kimia berbahaya yaitu pada produk makanan untuk konsumsi masyarakat. Sebagai contoh kejadian yang kerap timbul di masyarakat adalah penggunaan bahan kimia formalin pada ayam potong. Tujuan : Penelitian ini bertujuan untuk mengetahui indikator fisik keberadaan formalin dan mengetahui berapa banyak sampel yang mengandung formalin pada ayam broiler yang dijual di Pasar Godean Sleman, Yogyakarta Metode : Penelitian ini menggunakan metode survei. Objek penelitian ini adalah ayam broiler di Pasar Godean sejumlah 15 sampel ayam broiler. Penelitian ini dilakukan Desember 2023-Januari 2024. Sampel diperiksa di Laboratorium Kimia Jurusan Kesehatan Lingkungan. Hasil : Dari 15 sampel ayam broiler didapatkan 12 sampel ayam broiler yang memiliki ciri-ciri mengandung formalin dan 3 sampel ayam broiler yang tidak memiliki ciri-ciri mengandung formalin. Kesimpulan : Berdasarkan penelitian yang telah dilakukan diketahui 100% sampel ayam broiler yang positif mengandung formalin. Kata Kunci : Ayam Broiler, Formalin
