Abstract

ABSTRACK Food is a basic need for every human being to continue their life. The food needed must be healthy and have high nutritional value, such as containing vitamins, minerals, fiber, protein, carbohydrates and fat. There are lots of chemicals and various other mixtures that people use to make food. Food additives are used to increase or maintain nutritional value and storage quality, make food easier to serve, and simplify food preparation. Borax is a soft crystalline material. Borax can break down into boric acid which can accumulate in the body and can cause death. Lontong which is suspected to contain borax generally has a harder texture, slightly sour aroma and a shelf life of more than 2 times 24 hours. Lontong is a food that is often consumed by people as a substitute for rice in several foods such as ketoprak, lotek, pecel, satay and so on. This research aims to determine whether there is borax content in Madura satay rice cakes in Banyuraden Gamping Village. The research method used two methods, namely physical testing of texture, aroma and shelf life and chemical testing using a borax test kit. This type of research is descriptive, this research was carried out in May�June 2023. The research object was Madura satay rice cake in Banyuraden sub�district, Gamping, a total of 10 samples of lontong were examined using physical tests and chemical tests. The results of the research from 10 samples were observed by physical tests, all samples were negative for borax, to ensure that they were followed by chemical tests using a borax test-kit and the results of 10 samples of Madurese rice cake satay were negative for borax. Keywords: borax, rice cake. xiv INTISARI Makanan merupakan kebutuhan dasar setiap manusia untuk melanjutkan kehidupannya. Mekanan yang dibutuhkan harus sehat yang memiliki nilai gizi tinggi seperti mengandung vitamin, mineral, serat protein karbohitdrat dan lemak. Banyak sekali bahan kimia dan berbagai campuran lainnya yang digunakan masyarakat untuk membuat makanan. Bahan tambahan pangan adalah untuk meningkatkan atau mempertahankan nilai gizi dan kualitas simpan, membuat bahan pangan lebih mudah dihidangkan, serta mempermudah preparasi bahan pangan. Boraks adalah salah satu bahan berbentuk kristal lunak. Boraks dapat terurai menjadi asam borat yang dapat terakumulasi didalam tubuh sehingga dapat menyebabkan kematian. Lontong yang diduga mengandung boraks pada umumnya teksturnya lebih keras aroma sedikit asam dan masa simpan lebih dari 2 kali 24 jam. Lontong merupakan makanan yang sering dikomsumsi oleh masyarakat sebagau pengganti nasi pada beberapa makanan seperti, ketoprak, lotek, pecel, sate dan lain sebagainya. Penelitian ini bertujuan untuk mengetahui ada tidaknya kandungan boraks pada lontong sate Madura di Kelurahan Banyuraden Gamping. Motode pada penelitian menggunakan dua metode yaitu uji fisik tekstur, aroma dan masa simpan dan uji kimia menggunakan uji test kit boraks. Jenis penelitian ini adalah deskriptif, penelitian ini dilaksanakanpada bulan mei-juni 2023. Objek penelitian lontong sate Madura di kelutrahan banyuraden, gamping sejumlah 10 sampel pemeriksaan lontong menggunakan uji fisik dan uji kimia. Hasil penelitian dari 10 sampel yang diamati secara uji fisik seluruh sampel negative boraks, untuk mesmastikan dilanjutkan dengan pemeriksaan uji kimia menggunakan test-kit boraks dan dipaatlan hasil dari 10 sapel lontong sate Madura negative boraks.
