Abstract
LITERATURE STUDY OF RESTAURANT SANITATION AND HYGIENE Kiki Puspito Sembodro1, Siti Hani Istiqomah2, Lilik Hendrarini3 123 Jurusan Kesehatan Lingkungan Poltekkes Kemenkes Yogyakarta Email : kikipuspita357@gmail.com hani_ist@yahoo.co.id, hendrarinililik@yahoo.com ABSTRACT Background: Eateries, restaurants, and canteen are some of the public places that provide the most popular food processed by the community. Most people prefer to eat in restaurants, eateries, or canteen than to cook their own dishes. Hygiene of good food sanitation will affect the quality of the food produced. Food processing that does not meet hygiene requirements for food and beverage sanitation can cause food poisoning. Food has a very important role in public health. Food safety is a community's need, as safe foods protect and prevent illness or other health disorders. Objectives: Know the hygiene overview of the restaurant and cafeteria sanitation. Method: This research is the Literature Review or library review. Literature research or Literary review. Conducted a study on 5 journals according to inclusion and exclusion criteria. Then performed a descriptive analysis and drawn conclusions. Results: There are differences and equations from each journal. Derived from the results that hygiene of food and cafeteria sanitation should be observed in order not to happen pollution in foods. Conclusion: From the 9 eligible eateries 6 dining houses and 3 eateries are not eligible. Then from 5 canteen all categorized qualify. Keywords: hygiene of food and cafeteria sanitary houses INTISARI Latar belakang : Rumah makan, restoran, hingga kantin merupakan beberapa tempat – tempat umum yang menyediakan makanan olahan digemari masyarakat.Masyarakat kebanyakan lebih memilih makan di restoran, rumah makan, ataupun kantin dibandingkan memasak masakan sendiri. Higiene sanitasi makanan yang baik akan mempengaruhi kualitas makanan yang dihasilkan. Proses pengolah makanan yang tidak memenuhi persyaratan higiene sanitasi makanan dan minuman dapat menyebabkan keracunan makanan. Makanan memiliki peranan yang sangat penting dalam kesehatan masyarakat. Keamanan makanan merupakan kebutuhan masyarakat, karena makanan yang aman akan melindungi dan mencegah terjadinya penyakit atau gangguan kesehatan lainnya. Tujuan : Mengetahui gambaran higiene sanitasi rumah makan dan kantin. Metode : Penelitian ini adalah Literature Review atau tinjauan pustaka. Penelitian kepustakaan atau kajian literatur. Dilakukan kajian pada 5 jurnal sesuai kriteria inklusi dan eksklusi. Kemudian dilakukan analisis deskriptif dan ditarik kesimpulan. Hasil : Terdapat perbedaan dan persamaan dari masing – masing jurnal. Diperoleh hasil bahwa higiene sanitasi rumah makan dan kantin perlu diperhatikan agar tidak terjadi pencemaran pada makanan. Kesimpulan : Dari 9 rumah makan yang sudah memenuhi syarat 6 rumah makan dan 3 rumah makan belum memenuhi syarat. Kemudian dari 5 kantin semua dikategorikan memenuhi syarat.
