Abstract

Food and beverage sanitation hygiene is an effort to control the factors place, equipment, people, and food that can or may cause health problems and food poisoning. One of the foods that are prone to being contaminated with harmful bacteria is snacks in the school canteen. One effort to maintain food safety from microbial contamination is to do proper sanitation hygiene. The purpose of this study was to determine the study of the implementation of food and beverage sanitation for high school canteens in Sleman Regency by conducting descriptive research. As a research sample is using 11 canteens and 11 high school handlers in Sleman Regency and the variables studied consist of: canteen sanitation conditions namely buildings and building spaces and personal handler hygiene observed using a checklist. The results showed that the building variable consisting of 20 components contained 9 canteens fulfilling the requirements with an average yield of 83.6%; for building space variables consisting of 10 components, there are 8 canteens fulfilling the requirements with an average of 84.5%; and for personal hygiene variables consisting of 25 components there are 8 canteen handlers fulfilling the requirements with an average of 78.5%.
